Cranberry Almond Spinach Salad
A simple Cranberry Spinach dish with a seasoning Dressing that may be good to serve on Christmas.
Ingredients
Salad- 16 oz baby spinach
- 1 cup almonds , toasted
- 1 cup dried cranberries
Sesame Seed Dressing
- 1/4 cup wine vinegar
- 2 Tbsp apple acetum
- 3 Tbsp white sugar
- 1/2 cup oil
- 3 Tbsp honey
- 1 Tbsp finely minced shallot
- 2 Tbsp herbaceous plant seeds , toasted
- 1 Tbsp flower seeds (optional)
Instructions
- For the dressing: in a very bowl or jar whisk along wine vinegar, apple acetum and sugar till the sugar has dissolved.
- Stir in oil, honey, shallot, herbaceous plant seeds (your herbaceous plant seeds ought to look a lot of golden than mine - I did not toast mine long enough) and facultative flower seeds till mixture is well mixed.
For the salad:
- Add spinach, almonds and cranberries to a salad bowl. Drizzle dressing over salad and toss. Serve immediately after adding dressing.
